Christmas Cod


 

Time: 50 minutes - Serves: 8 people - Difficulty: Difficult

 

Ingredients:

  • Cod

    • 1.2 kg cod fillet
    • 2 tbsp salt
    • 2 garlic cloves
    • 3 star aniseed
    • 1.5 dl olive oil
    • 5 black peppercorn
    • 3 slices ginger
    • 0.25 orange
    • 2 bay leaves

  • Mashed Vegetables

    • 0.5 lemon
    • 600 g swede
    • 300 g carrots
    • 1 twig rosemary
    • 50 g butter
    • 1 dl single cream
    • salt and pepper

  • Sauce

    • 1 shallot
    • 1 tbsp chives
    • .05 tbsp thyme
    • 1 dl red wine
    • 2 dl fish stock
    • 2 tbsp butter
    • salt and pepper
 

Preparation:

  • Cod
  1. Preheat the oven to 150 ºC. 
  2. Season the cod with salt and wait about 15 minutes. 
  3. Rinse the cod, dry it with paper towels and cut it into 8 portions.
  4. Put the olive oil, ginger, orange peel, and all the spices in an ovenproof dish. Cook in the oven for about 15 minutes.

  • Mashed vegetables
  1. Grab a pot, fill it with water and place the rosemary and the slices of lemon inside.
  2. Peel and dice the carrots and swede and cook them in the pot.
  3. Strain off the water and remove the lemon and rosemary.
  4. Mash it with butter and cream.
  5. Season with salt and pepper.

  • Sauce
  1. Chop the shallot, chives and thyme and sauté in butter until the shallot is soft.
  2. Pour in the red wine and fish stock. Wait until they reduce to half.
  3. Strain the sauce and whisk in butter.
  4. Season with salt and pepper.

 

To finish the dish, put the cod fillet on top of the meshed vegetables and pour the sauce over. Open a bottle of wine selected by Wow Wines and enjoy your meal.
